Healthier Tiger Stripe Cookies, a Chocolate Treat For Everyone

When my daughters were little I baked cookies regularly. With one exception, Oreo cookies, my kids knew little about store-bought. All of our cookies were homemade and I made one or two kinds each week. I have hundreds of cookie recipes and, like most people, nibble on raw dough and taste the cookies to see how the batch turned out.

When it comes to baking, unfortunately, I'm my own best customer. I stopped baking cookies after I gained weight. But my teenage grandchildren live with us now and they are always hungry. Grocery prices are shooting up and, to save money, I decided to bake cookies again. So I'm back to baking some of our family's favorite cookies, including Tiger Cookies.

The recipe was originally published on the Kellogg's Frosted Flakes box. I found the recipe in "Best Recipes from the Backs of Boxes, Bottles, Cans and Jars," by Ceil Dyer. Published in 1979, my cook book is frayed, falling apart, and the pages are covered with drips. Since the cook book was published I've learned a lot about nutrition and decided to create a healthier version of Tiger Cookies.

I substituted half white, half wheat flour for all-purpose flour. This flour is heavier than regular, so I used less. For sweetness I used half Splenda and half sugar. Instead of two eggs, I used one and some egg substitute. The biggest change in the recipe was the shortening. The original recipes calls for butter or margarine. I used I Can't Believe it's not Butter! This stick margarine, a blend of soybean and canola oils, has 50% less fat than butter, 0 grans of trans fat, and 0 cholesterol per one tablespoon serving. Because I'm a vanilla nut I doubled the amount.

While these cookies freeze well, they are fragile, so put them in a plastic container, not a plastic zipper bag. A cookie and a glass of milk make a delicious after school snack. For an unusual dessert, fold broken cookies into sugar-free, fat-free vanilla ice cream. I think everyone in your family will enjoy these Healthier Tiger Stripe Cookies. My grandson's friends eat them by the handfull!

Healthier Tiger Stripe Cookies

Ingredients

1 1/4 cups half white, half wheat flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup I Can't Believe it's Not Butter! (2 sticks)

1/2 cup Splenda (regular)

1/2 cup sugar

1 large egg

1/4 cup egg substitute

2 teaspoons pure vanilla extract

3 cups frosted corn flakes, crushed to make 1 1/2 cups

6 ounces semi-sweet chocolate chips, melted

Method

Whisk flour, baking soda, and salt together. Set aside. Cream margarine, Splenda and sugar until fluffy. Add egg, egg substitute, and vanilla. Fold crushed cereal into batter. Drizzle melted chocolate chips over batter and fold in with rubber scraper, making sure to leave some streaks. (You don't want the batter to be all chocolate.) Drop by teaspoons into prepared baking pans. Bake at 350 degrees for about 12 minutes. If you are using no-stick baking pans, reduce the heat to 325 degrees and bake a little longer. Makes at least 5 dozen cookies.

Six, you may add years to your life span. You can never know how long you will live; however, lowering your risk of heart attacks, the number one killer in America, you may indeed add years to your life.

Seven, losing inches around your waist lessens your chances of heart disease. Men, whose waist measures above 39 inches, are at greater risks than those whose waist line is below 39. For women the magic number is 35 inches.

Eight, you will be at less risk to develop cancer. Diet has been proven to decrease chances of developing cancer. A diet high in dietary fiber can greatly reduce the risk of colon cancer. By eating a proper diet, you lower your risks.

Nine, You reduce your chances of osteoporosis. That's right! A diet high in sugar has been linked to this disease, too.

Ten, you may never develop atrium fibrillation. One of the common causes of afib is a thickening of the heart wall due to high blood pressure. This causes one part of the heart to beat faster than another part of the heart. Afib can kill you if left unchecked. Some people with afib and on a sugar free diet have been able to quit their meds for this killer.

The promotion and display of food in our grocery stores make it nearly impossible for parents to bring their children along on the weekly grocery trip.

If you can make it past the cookie and snack aisles without a fight, you're lucky. If you can make it through the checkout lane, it's a miracle.

There it is, a display of candy staring at your children. Meanwhile, parents are trying to unload the cart and pay for their groceries. It can be hectic when your child is begging for a bag of Skittles.

Many parents have enough control to say no or to ignore their child even if they throw a temper-tantrum. Many more do not. Giving into these whiny pleas has led to a lot of obesity, dental problems, and other adverse health effects.

As consumers, we have the right to demand what we want and need from our grocery store. If a candy-free check-out lane could cure our inability to say no to our children and avoid the impulse buy for ourselves, is it likely that we can get Kroger to grant our wish? Farmer Jack already has.

Consumer demand is one of the least utilized powers we have. We should all take it upon ourselves to bring this concern to Kroger's attention.

As a Diabetic myself, I want to talk to you about the benefits of oatmeal porridge. Yuk you say...that's how I felt; now I love my daily dose of magic.

For a diabetic there is probably no good food that oatmeal porridge for two reasons.

Oats are high in soluble fibre which helps sell out Ldl (bad) cholesterol without lowering Hdl (good cholesterol). Since heart disease is one of the risk factors of diabetes your morning porridge will help you sound a salutary heart.

But there is more! The soluble fibre slows down the digestion of starch which means you avoid those spikes in blood sugar that lead to increase insulin output which means...guess what...hunger pangs.

Since oatmeal is absorbed gently into the blood stream it is consider a low glycemic food. The benefit also includes leaving you feeling full and satisfies over a longer duration of time... Pushing away those pesky craving.

Some study earnings oatmeal with stabilizing blood glucose levels...more good news.

Oats are a great source of nutrients, together with those very prominent B vitamins. Oats are also mineral rich in Zinc, Iron, Manganese, Selenium, and magnesium.

Preparation

Do not use milk to boil your oats. Milk has a surprisingly high content of sugar even in partly skimmed. Use water, a pinch of sea salt, and cook the oats relatively slowly. I use organic old fashioned oats, which I cut myself in my food processor. You can skip that step by buying quick oats, but still try to find organic quality. I find the taste from cutting my own oats so much better. I am not sure why, but since I started doing that I well love my porridge.

The porridge is ready when the oats are soft and a milky liquid forms on top of the oatmeal. After a few meals you will know what I mean.

Do Not Use Instant Oats! The stuff that comes in those packages is full of sugar! It only takes ten minutes to get ready fresh oatmeal porridge so don't be tempted to cheat.

Once my oatmeal is cooked, I do add a little bit of milk and one table spoon of raw honey (unpasteurized).

You can also add in small part positive fruits, but then sell out or eliminate the honey. A merge of large strawberries, a handful of blueberries, raspberries or blackberries can change up the flavour. Avoid dry fruits which have higher levels of sugar. Raw nuts, such as chopped walnuts or almonds make a nice change while sprinkling raw pumpkin seeds or hemp seeds will increase the wholesomeness of your breakfast even more.

Raw Honey:

I will delve supplementary into the whole raw food issue shortly. Right now I want to talk about raw honey as someone else aid in fighting bad cholesterol in its unprocessed unpasteurized form. I make this recipe every year for my family and for Halloween parties and it is always a big hit! It's great because the recipe is easy and the treats come out lite and tasty.

It's also a great Halloween project to do with the kids, because they can get creative with the shapes and decorations. In our house our favorite Halloween meringue cookie shapes are ghosts and bones, but the possibilities are endless.

Ingredients

1 1/2 cups of sugar

5 egg whites at room temperature

1/2 teaspoon cream of tartar

pinch of salt

1 to 2 teaspoons of vanilla extract to taste

Black gel icing

Directions

Line two cookie sheets with parchment paper.

Preheat oven to 220 degrees fahrenheit.

Beat egg whites and cream of tartar with mixer until soft peaks form, this could take from two to five minutes. I alwys use a Kitchenaid standing mixer but a hand mixer will work as well.

Gradually add sugar while also gradually increasing the mixing speed to medium.

Add vanilla extract and continue beating until stiff peaks form.

Spoon the mixture into a cake or pastry piping bag with a 1/4 - 1/2 inch tip or with a plastic bag and cut off a 1/4 - 1/2 inch tip at the corner of the bag.

Pipe a swirl to make a ghost and repeat until the cookie sheets are filled.

Bake for one hour. Then, turn off heat and allow the cookies to sit for at least an hour. Do not open oven at any time during the baking process.

Use black gel icing to make eyes and mouths on the ghosts.

Carefully remove cookies from parchment paper and enjoy them while they are fresh or store in an airtight container.

If you want to make meringue bones, simply pipe a 3-4 inch line and add two balls to the end of each.

Recipe yields 3-4 dozen.

4th of July Desserts Suitable For Diabetics

July 4 is not only the birthday of our great country, it is also a day synonymous with the 5Fs; family, friends, fun, fireworks and food. And we diabetics don't want to be cheated on the food part of the celebration! Following, I have pulled together some great recipes that are suitable for diabetics and I believe, excellent dessert ideas for your Fourth of July celebrations.

AMERICANA PARFAITS

1/2 cup fresh blueberries

1 cup fresh strawberries

1 small package strawberry-flavored sugar-free gelatin

3/4 cup boiling water

1/2 cup cold water

ice cubes

3/4 cup frozen sugar-free whipped topping, thawed

Wash fruit and pat dry on a paper towel; set aside. Reserve 3 strawberries with leaves still attached. Reserve 6 blueberries and set aside with the 3 strawberries. Get six parfait glasses and divide the remaining fruit evenly between them. Set aside.

In a medium mixing bowl, stir boiling water into gelatin. Stir at least two minutes to dissolve gelatin completely. Put cold water in a two-cup measuring cup and add ice cubes to make 1 1/4 cups. Add to the gelatin and stir until slightly thickened. Remove any remaining bits of the ice cubes. Pour out 3/4 cup of the gelatin and set aside. Pour the remaining gelatin evenly over the fruit in the six parfait glasses. Refrigerate 1 hour or until set but not firm. Using a wire whisk, stir whipped topping into the remaining gelatin until smooth. Spoon over gelatin in parfait glasses. Refrigerate 1 hour or until firm. Before serving, top half the glasses with the reserved strawberries and half with the reserved blueberries.

OREO COOKIE DESSERT

2 small pkgs sugar-free instant vanilla pudding mix

3 cups low-fat milk

8-oz light cream cheese, softened

8-oz carton frozen sugar-free whipped topping, thawed

16 Oreo sugar-free cookies, broken into pieces

Mix together pudding mix and milk on low speed of electric mixer; add cream cheese and mix until well blended. Add whipped topping and mix well with a large spoon (do not use mixer). Add cookie pieces and mix in. Chill for several hours or overnight before serving.

SUNSHINE CUPS

3/4 cup boiling water

1 small pkg sugar-free orange gelatin

1/2 cup cold orange juice

1/2 cup cold water

1/2 cup fresh raspberries

1 small can mandarin oranges, rinsed and drained

Put dry gelatin into a medium mixing bowl. Stir in boiling water and still at least two minutes until gelatin is completely dissolved. Stir in juice and cold water. Refrigerate approximately 1 1/2 hours until thickened to the point that a spoon drawn through the mixture leaves a definite impression.

Take 3/4 cup of the thickened mixture out and set aside. Stir raspberries and orange segments into the remaining gelatin mixture. Pour into 6 serving dishes or into 1 larger bowl. Beat the reserved gelatin on high speed of electric mixer until fluffy and approximately doubled in volume. Spoon over gelatin. Refrigerate at least 3 hours until firm.

If you don't mind heating up the oven--I suggest doing this early in the day--try these apple dumplings. We all know Apple Pie is considered very American but why not show your family and friends how creative you are by changing things up a little and going with Apple Dumplings instead?

APPLE DUMPLINGS

2 cups self-rising flour

1/2 cup shortening

3/4 cup low-fat milk

5 cups chopped apples

1 cup Equal Sugar-Lite

1 tsp cinnamon

Preheat oven to 375 degrees. Cut flour into shortening as if making a pie crust. Add milk. Make into a dough and roll out into a rectangle. Add Equal and cinnamon to apples and mix together. Spread apple mixture over dough. Roll up jelly-roll style and cut into slices. Place into a baking pan and pour sauce over all. Bake 1 hour.

To make sauce: Bring to boiling:

2/3 cup butter, 1/2 cup sugar, 1 cup Splenda and 1 1/2 cups boiling water

NOTE: The sauce in this recipe uses 1/2 cup sugar. You can substitute 1/2 cup unsweetened applesauce or go with the sugar if you don't like the applesauce results. But be aware of this when fitting this recipe into your diet!

CHERRY DELIGHT

1 sugar-free angel food cake

1 pkg (8 oz) light cream cheese, softened

1 small pkg sugar-free instant vanilla pudding mix

1 tsp vanilla extract

3 tbsp Splenda

1 can lite cherry pie filling or no-sugar-added cherry pie filling

1 small carton sugar-free frozen whipped topping, thawed

1/3 cup chopped pecans, if desired for garnish

Tear cake into bite size pieces and lay on bottom of a 9x13-inch pan. Mix pudding according to package directions and refrigerate until set. Mix cream cheese, vanilla and Splenda into the pudding. Sheila told me the other day that she's again removing sugar from her son's diet. She's convinced from what she's heard and from her own perceive that removing sugar from his diet will decrease his hyperactivity.

Many people claim that sugar (such as sucrose), aspartame (NutraSweet), and artificial flavors and colors cause hyperactivity and other behavior problems in children. Unfortunately, it's not so simple.

The conception that food can have an effect on behavior grew beloved in 1973 when an allergist, Benjamin Feingold, M.D., published the Feingold Diet. He advocated a diet free of food colorings and artificial flavoring for treating hyperactivity. Many parents deduced that food additives, along with sugar, should be avoided.*

However, double-blind studies - in which neither the children, their parents, nor the researchers know which child had sugar and which received a placebo - indicate that sugar in the diet does not influence the children's behavior. (ibid.)

On the other hand, refined (processed) sugars may have a temporary effect on children's performance level. Because refined sugars and carbohydrates enter the bloodstream quickly, they yield rapid fluctuations in blood glucose levels. This process might trigger adrenaline and make a child more active. **

Thus, an observation that eliminating sugar has an immediate effect on behavior is truly credible. But, similar to the process in the rest of us, the convert in blood glucose level doesn't last. And for children who do not have to watch their blood glucose levels (e.g., as when they suffer from diabetes), eliminating sugar does not solve the question of hyperactivity.

Moreover, the expectation that sugar will impact on a child's performance level affects the way we view that child's behavior. A study published in the August 1994 Journal of Abnormal Child psychology showed that parents who believe a child's behavior is affected by sugar are more likely to comprehend their children as hyperactive when they've been led to believe the child has just had a sugary drink (WebMd.com).

Rather, it is the whole context in which that child is managed that impacts on his or her behavior. Monitoring the number of sweets in a diet is wholesome in terms of tooth decay and nutrition; using permissible behavior administration techniques and setting limits with love and consistency will help the hyperactivity.

Smore Brownies Recipe

The smore brownies recipe is rich with flavor. Dark chocolate and marshmallows on top of graham crackers! Just like the campfire favorite, this one is best served warm and gooey!

Ingredients

8 whole graham crackers, broken crosswise in half (15 squares needed)

1 1/2 sticks (3/4 cup) salted butter

4 squares unsweetened baking chocolate

2 cups granulated sugar

3 eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

2 1/2 cups miniature marshmallows

1 cup semisweet chocolate chunks

Hardware

Large microwave safe bowl

13 x 9-inch baking pan

Aluminum foil

Step 1: Preheat oven to 350 degrees F.

Step 2: Line a 13 x 9-inch baking pan with aluminum foil, with ends of foil extending beyond sides of pan.

Step 3: Lightly grease the foil lined pan; set aside.

Step 4: Place 15 of the graham squares on the bottom of the pan, overlapping slightly.

Step 5: In a large microwave safe bowl, place the butter and unsweetened chocolate. Microwave on high for 2 minutes or until butter is melted. Stir until chocolate is completely melted.

Step 6: Stir in granulated sugar.

Step 7: Add eggs and vanilla extract; mix well.

Step 8: Stir in the flour until well blended.

Step 9: Spread over the graham cracker squares in pan.

Step 10: Bake for 30-32 minutes or until toothpick comes out with fudgy crumbs. Do not overbake.

Step 11: Sprinkle evenly with marshmallows and chocolate chunks. Bake an additional 3-5 minutes or until marshmallows begin to melt. When cooled, lift out of pan with aluminum foil handles. If desired cut into smaller squares.

Makes 15 large, or 30 smaller brownies.

CRANBERRY-WALNUT PINWHEELS
1 cup cranberries
1/2 cup sugar
1 tsp cornstarch
1/4 cup water
2/3 cup walnuts, finely ground
2 tbsp butter, softened to room temperature
3/4 cup butter
3 cups all-purpose flour
1 cup sugar
1 egg
3 tbsp milk
1/2 tsp baking soda
1/2 tsp vanilla extract

To make the filling:
Combine the cranberries, half cup of sugar, and the cornstarch together in a small saucepan. Add the water; bring mixture to a boil, stirring until sugar is dissolved. Gently boil over medium heat for 5 minutes, stirring often. Remove the mixture from the stove. While hot, press the mixture through a sieve and discard the solid matter. Cover the surface of the mixture and allow to cool without stirring or bothering.

In a food processor (or blender) after grinding the walnuts, add the 2 tablespoons of softened butter and process until the mixture is smooth and of spreading consistency, stopping to scrape down sides as needed.

To make the dough:
In large mixer bowl beat 3/4 cup of the walnut mixture at medium speed of electric mixer for about 30 seconds until softened. Add 1 1/2 cups of the flour to the nut mixture and mix just until combined. Add the 1 cup of sugar, the egg, milk, baking soda, and vanilla extract. Beat until the mixture is thoroughly combined, scraping down bowl as needed. Beat or stir in the remaining 1 1/2 cups of flour. Cover dough and chill for approximately an hour until easy to handle.

Divide the dough in half. Place in half between two sheets of waxed paper and using a rolling pin, roll each half into a rectangle about 16 x 12 inches. Spread half the filling mixture over each rectangle. Starting at a short side, roll rectangles up jelly-roll style. Remove the waxed paper as you roll. Moisten the edges and pinch together to seal filling inside. Wrap each roll securely in plastic wrap and refrigerate at least 4 hours but up to 2 days.

Preheat oven to 375 degrees.

Cut the rolls into slices 1/4-inch thick. Place cookies on lightly greased cookie sheets about 2-inches apart. Bake at 375 degrees for 10 to 12 minutes or till the edges are firm and the bottoms are just lightly browned. Remove cookies to wire racks to cool completely.

Yield: 96 (8 dozen) cookies

Eating Gluten Free - Is Mustard OK?

Is mustard gluten free? In its raw seed form, yes, but when it is mixed into prepared mustard paste, flour, beer, or malt vinegar is sometimes added. This is a "read the label every time" products but if the ingredient list doesn't include flour, beer or malt vinegar, go ahead an enjoy it.

Commercial mustard comes in many forms from raw seeds to powdered mustard flour to rich creamy or oily spreads that go well with roasted meat and in sandwiches.

Mustard seeds are tiny round seeds - about 2mm or less than one eighth of an inch in diameter. The seed color ranges from almost white to black. These seeds are naturally gluten free and are vastly different in size from any gluten containing grain. When the seeds are separated from the pods and stems, a sieve with very small holes will also separate out any volunteer gluten-containing seeds. Most commercially exported mustard seed comes from Canada, the Russian Federation and Ukraine.

Mustard seeds are mixed with water, vinegar, oils, and other spices and flavourings to make the spreadable prepared mustard pastes. Depending on the type of seed and the processing traditions, the final product ranges from white to bright yellow to black. The seeds may be crushed into a fine powder or left whole. Prepared mustards may be thick or quite thin.

Dry mustard, mustard flour or mustard powder is very finely ground mustard seeds. It has a flour-like texture but it does not contain wheat flour. Mustard powder is often added as an ingredient in other commercially prepared foods as a flavoring agent.

Wheat flour is sometimes added to prepared mustards to adjust the texture, taste, and cost of the product. If wheat flour is added, it must be listed on the ingredient list. Beer is occasionally added to specialty mustard, making the product not gluten free it must also be included on the label. Malt vinegar does not seem to be used in commercial prepared mustards, but it often appears in recipes for home made mustards. If so, the mustard will not be gluten free.

As a summary, mustard has a very low risk for cross contamination at planting and harvesting. A few commercial prepared mustards use flour or beer as an ingredient. Homemade prepared mustard may use beer or malt vinegar. Don't worry about mustard powder or seeds used as an ingredient in other condiments like mayonnaise or salad dressing.

As the overall safety of the public water supply is under scrutiny thanks to a recent Associated Press study that uncovered some disturbing contaminants, many consumers are likely finding themselves wondering if bottled water is better. For many, the facts about bottled water will make this the clear choice. The problem lies in deciding what kind of bottled water to select. Understanding the differences between purified water and spring water can guide consumers in the right direction.

While there are some distinct differences between purified and spring water, many find the overall benefits of bottled water in general make this option a smart one. The extra processing that most bottled waters are subjected to can help remove impurities that slip through the public water supply's treatment and testing programs.

Basic Bottled Water Facts Consumers Should Know

Bottled water undergoes a great deal more regulation and scrutiny than many consumers realize. While it is not regulated by the same agency that oversees the public water supply - the U.S. Environmental Protection Agency - it does receive government oversight. In the case of bottled water, the agency that insures strict standards are adhered to is the U.S. Food and Drug Administration. Beyond FDA regulations, many of America's bottled water suppliers are members of the International Bottled Water Association. This voluntary, industry association holds its members to stricter standards than the federal government and even state governments. The IBWA demands that its members:

Adhere to safety and quality standards - The IBWA goes above and beyond FDA and EPA standards in this regard. Subject themselves to annual, unannounced inspections - These are performed to make sure that IBWA members are meeting the strict regulations the association places on its membership.

Bottled water sometimes comes from the same sources as public water. In fact, many suppliers of bottled water start out with the tap and then further process to create their own distinct brand. Some, however, do not.

Understanding Spring Water

While spring water and purified water can come from exactly the same underground sources, the treatment processes that are involved in the two varieties can vary rather greatly. In general, spring water must come from protected, pure underground sources to carry this moniker.

According to the IBWA, spring water that is bottled must come from an underground source that has natural water flow to the earth's surface. The water itself must be gathered from the spring or from a borehole that taps into an underground formation. To earn the title of spring water, the collected water itself must carry all the same properties prior to treatment that the spring contains.

Spring water is subjected to the same FDA and IBWA standards that other forms of bottled water must adhere to. This means that it must be tested for quality and that some form of treatment is generally called for to insure safety and purity.

The Purified Water Difference

Depending on the supplier in question, purified bottled water might actually come from the exact same source as spring water. This, however, is where the two varieties differ.

To earn the name "purified," water must undergo one or more specialized treatment processes, according to the IBWA. The options include distillation, reverse osmosis, deionization and so on. Purified water, in essence, is highly treated drinking water that does not contain the chemical compounds found in the public water supply. Chlorine aftertastes, for example, will not be found within purified water.

Distilled Oxygenated Water Is Purified At Its Best

Distilled oxygenated water is one form of purified water that is gaining a lot of attention. To create this particular product, the source water is distilled for purification purposes. This step in the process removes impurities and insures that FDA and IBWA standards are met or exceeded. The oxygenation process itself requires the infusion of oxygen molecules into the end product. The final result is a water product that is clean, crisp tasting and adherent to FDA and IBWA standards. Many find purified bottled water is the superior choice when safety and flavor both matter.

Making the decision to purchase spring water versus purified water often comes down to personal choice. Many people prefer the taste and the added security that purified bottled water can deliver. The reality is many forms of distilled and spring water come from the exact same source. It would be fair to assume that almost everyone on the planet loves sugar and sweet foods. Processed sugar is in many products and is a key ingredient for baking. It seems that everyone has a sweet tooth for some sugar food in one way or another. Most people know to limit their intake of processed sugar, however, what most people don't know is that sugar is one of the worst ingredients to put into your body. The chemical reaction of sugar in the body acts as a poison. Studies show that sugar has drug like effects in the body.

Processed sugar has many harmful effects throughout the body and can cause major imbalances in the organ systems. You could say that sugar tends to throw off the homeostatic balance of the whole body by increasing the production of adrenaline by many times. In essence, sugar stimulates the nervous system by inducing a flight or fight response.

This is obviously not a healthy process. This intense reaction of the body increases the production of cortisone, which suppresses immune function and can lead to other health disorders.

The daily intake of sugar leads to many other imbalances and malfunctioning of the bodily processes. High sugar consumption leads to an overly acidic body and in turn will cause the body to strip nutrients from its reserves to counterbalance this effect. Sugar and its Link to Weight Gain

Since the liver's capacity to store sugar in this form is limited, the liver will start to expand almost like a balloon with continued daily sugar intake. When the livers' capacity has been filled, the excess glycogen (glucose) is returned to the blood in the form of fatty acids (fat). Creepy and Cute Halloween Cake Design Ideas

To help you get started scheming and designing your ghoulish confections, here are a few Halloween Cake Design Ideas. Try these or create your own spin-off's!

Haunted House - Sheet, Novelty Pan or Sculpted Castle

This Halloween cake can be made in many ways.

1. Trim a sheet cake into the shape of an old Victorian house with gables. Then pipe icing windows, doors, and other details, including cobwebs. Ghostly shapes are easy to pipe and fill in with snow-white buttercream icing. Add bats and other easy to pipe Halloween creatures.

2. Or you can use a novelty cake pan with the haunted house theme. Many of these come with decorations and instructions.

3. For a really exciting Halloween cake, try a haunted castle cake! Butter cakes works well. Stack two or more cakes, being sure to place supportive plates in between the layers. If the cake is large like a wedding cake, add cake dowels.

Towers can be created with upside down ice-cream cones or paper towel rolls, shortened to fit proportionally to your cake.

For edible towers, bake a pound cake in a jelly roll pan, and then using a cookie-cutter or glass, cut our circular pieces of uniform size. Skewer these, and then stick the skewered towers into the cake. Then ice them and pipe designs and windows.

For an amazing haunted house castle - think detail. For example, you could cut out windows and place inside kooky ghosts or other ghoulish figures (modeled with rolled buttercream, created with gum paste molds, or store-bought).

You might even want to add a moat and drawbridge! Tuck green miniature lights behind the turrets and under the drawbridge for an eerie glow.

If you model your Halloween cake figures with gum paste, creations will dry hard and last for years, but the children won't enjoy the taste much. Marzipan's expensive, and this almond paste isn't as much of a hit with kids as grown-ups. Your best bet for your Halloween cakes is Rolled Buttercream. It's a great tasting icing dough that can be easily modeled or molded.

Frankenstein's Bride - Vintage Halloween Cake

Here's a spin off from our charming doll cake that is made with a Barbie type doll and a cake dress. Use a doll with black hair. Tease the hair so it's all puffed up and then paint the lightening stripes up each side of her hair do. (For a humorous version, you could make her hair stand straight up).

Paint her face a pasty white, add make-up (search online for "Bride of Frankenstein doll" and "Bride of Frankenstein costumes" for ideas. Cover the negligee dress with smooth, white buttercream and maybe add some black spiders and lacy impressions.

Another idea: A vintage 60's Halloween doll cake could be fashioned after the Adam's Family's Mortisha.

Jack o' Lantern Bundt Halloween Cake

This is an easy Halloween cake for cake decorators new to cake sculpting.

Young children will adore a Jack o' Lantern cake with a cute or goofy expression, while most older kids will get a kick out of an outlandish or spooky face.

Start with 2 bundt cakes (butter, pumpkin and pound cakes work well). Then after leveling and icing the bottom of the cakes, fit them together to form the pumpkin. Cover the pumpkin with smooth, orange buttercream. Then pipe and/or use rolled buttercream to model the facial features. Pipe green leaves on top and add a stem made of rolled buttercream or an upside-down ice cream cone, iced with green.

Last, but not least, here's an important Halloween Cake tip. The amount of liquid food coloring needed to create black or dark brown icing will probably give your icing a bitter taste. To avoid making a Halloween cake that tastes creepier than it looks, try one of these ghoulishly clever tips:

· Use gel, paste or powder coloring. They're concentrated, so you won't need as much.

· Begin with dark chocolate buttercream, and you'll need even less.

· Instead of black icing, cover plain buttercream with crushed, dark chocolate cookies, and use licorice and such for spiders and bats.
